This Diwali was definitely a quieter one than most years so I really wanted to think of ways to make it fun for my 5 yr old.
I was brainstorming with my talented BFF, Nishika, and she suggested simply pressing the coconut ice into a clay lamp as a mold. So using a plastic wrap on the top of the clay lamp, my 5 yr old pressed in the coconut ice (I helped smooth it out) and it produced these beautiful coconut ice lamps.
I used this recipe (click here to jump to recipe) from Kitchen Sanctuary to figure out the ratio of condensed milk, powdered sugar and desiccated coconut. I then divided all the ingredients by 4 (depending how many colors you want to make) and colored each bowl of condensed milk with the food coloring. Once the condensed milk was the desired color, I added the necessary ratio of coconut and powdered sugar.
It worked great and was delicious! My son had fun making it and it also looked so good in pics.
