Cool Cucumber Mint Raita

Delicious cool, minty, cucumber yogurt salad that makes a perfect side dish. It is typically eaten with vegetable briyani, chicken briyani and best with lamb briyani. The dish consists of only 5 ingredients and outside of adding too much salt there isn't much you can do to cause it to flop.

Use half an english cucumber that has been washed and peeled. Grate into a medium size bowl. Some people squeeze the water out and use the drained grated cucumber. I on the other hand use it as is with the extra water/juices that the cucumber releases. The reason for this is that I also use plain greek yogurt which is a thick consistency and the cucumber juices help to thin it out. This way we also capture all the cool flavor.


A bunch is not a standard form of measurement and if you buy a bunch of mint at the grocery store its usually anywhere between 1 - 2 cups in volume. The amount of mint you use does not have to be exact but somewhere in that range will work. Chop the mint fine with a knife or a mini chopper and add it to the cucumber.


In a very small pan heat/toast about half a teaspoon cumin seed until it browns a bit and give off an aroma - about 2-3 min. Stamp it into a powder - I use my trusty mortar and pestle for this.

Add it to the bowl of ingredients with 2 cups plain greek yogurt (choice of fat, low fat or non fat). Mix well and add salt to taste.

Ingredients

  • 1/2 english cucumber peeled and grated

  • 1 bunch mint finely chopped (2 - 3 cups)

  • 1/2 tsp cumin seeds

  • 2 cups plain greek yogurt (non fat, low fat or full fat)

  • salt to taste


Method

  1. Grate cucumber into medium bowl.

  2. Add chopped mint.

  3. Toast cumin seeds in a pan until brown and fragrant ~ 2-3min. Grind into a powder and add to bowl.

  4. Add 2 cups plain greek yogurt and salt to taste

  5. Mix well and serve as a side to your favorite briyani.
