I like my simple side salads and this Arugula Mandarin Salad with easy Balsamic Vinaigrette Dressing definitely qualifies as one of them. Arugula has that lovely kick in it's taste that the arugula leaves alone with a sweet fruit like mandarin, oranges or even strawberries compliment this so well. Feel free to swap out the mandarin for oranges or strawberries if you prefer or even add a combination if you like.
The mandarins I like to use are Halos/Cuties. I usually have them on hand as a quick snack for my little one. He happened to walk in as I was preparing the salad and wanted to help out.
They are easy to peel, have no seeds and are usually pretty sweet. I would use about 2 of these clementines/mini mandarins for 2.5 oz arugula. This recipe can easily be scaled up or down.
Simply plate the arugula, peel and place the segments of fruit on the top. For the dressing, the key is to have a good balsamic vinegar. I really like this Organics Balsamic Vinegar - it has the prefect balance of sweet and tang. I personally do not like too much dressing on my salad however others do like a little extra. This is why I recommend making the dressing and serving on the side or drizzle only a small amount on the main dish allowing guests the option to add more if they desire.
The dressing is as simple as the salad. Adjust salt and pepper to taste.
This salad has a delicious blend of sweet, tang, citrus and peppery all in one. While it goes really well on the side of grilled fish there is no reason you can't have it on the side of any other dish. Enjoy!

Ingredients
2.5 oz Arugula
2 mini seedless mandarin like Halos/Cuties peeled and broken into segments (optional to use strawberries or oranges in addition or instead)
1 Tbsp good balsamic vinegar
2 Tbsp olive oil
1/4 tsp salt (or to taste)
1/4 tsp ground black pepper
Method
Plate the arugula.
Place mandarin segments/fruit pieces on top of arugula randomly spaced.
In a tiny bowl mix olive oil, balsamic vinegar, black pepper and salt.
Drizzle dressing over salad and serve
