Easy Spicy Garlic Edamame Appetizer / Low Carb Snack Option

This is so easy, I am almost second guessing making it a blog post but it's something I made and love so hope others enjoy it as well. If you are cutting carbs and craving something on the salty/savory side this edamame snack perfectly satisfies the craving. You can also make this dish and serve it as an appetizer to create some variety.

Warning - these are super addictive.




I prefer to use the edamame that still has the shell on. I feel like the pods hold the flavor closer to the bean and it just tastes better. I also use edamame I purchase from the frozen section at the grocery store. These are typically pre-cooked so once thawed, all you really need to do is heat it up in some delicious flavored olive oil. It is pretty flop proof. When buying the frozen packs, also check if it already has some salt added and make a mental note.


Using a non-stick pan heat up about 2 Tbsp olive oil on medium heat and add the garlic and chili flakes. I prefer this more on the spicy side but feel free to adjust accordingly to reduce the chili flakes if you need. I also love garlic so I use 4 large cloves that has been pressed, crushed or finely chopped. Fry these 2 ingredients for about 2 minutes to release the flavors. The smell of garlic being fried is always amazing. The oil will be hot so when you add in the edamame it will probably sizzle or splatter so be careful. Add salt to taste if needed and cook for about 5 min while tossing and mixing in the spices - again you are simply heating it up since we are using the cooked edamame. That's it - super simple.


Serve warm with an extra bowl for the pods. Sit back and enjoy!

Yield ~ 16 oz edamame

Prep Time ~ 1 min

Cook Time ~ 5 min


Ingredients

  • 16 oz bag frozen cooked edamame (that has been thawed)

  • 1 tsp chili flakes (reduce to 1/4 tsp for a milder version)

  • 4 large cloves garlic (crushed or pressed)

  • ~2 Tbsp Olive Oil / Oil of choice

  • salt to taste


Method

  1. Heat a non-stick pan on medium heat and add the oil.

  2. Add garlic and chili flakes and fry for 2 min mixing frequently

  3. Add the edamame and salt to taste. Toss in oil and spices until heated through ~5min.

  4. Serve warm with an extra bowl for the pods.
