2020 is the year of Banana Bread so I have to contribute our tried and tested banana oat pecan muffin recipe. We attempted to make some healthy additions and changes - these turned out tasty, hearty and pretty filling as well.
We decided to make muffins instead of bread so we could freeze half the batch. It's extremely easy to take individual muffins from the freezer, zap in the microwave for 30s and have warm fresh muffins ready to go. This works great for a grab and go breakfast as well.
It was a good way to use up some bananas before they got too old. My 5yr old loves them cut in half and smeared with almond butter. I on the other hand enjoy them served with butter and a cup of tea.
I did try to add the zest of a lemon to get a pop of citrus flavor, however we never really got the lemon coming through. On the next batch I will add slightly more lemon zest. Feel free to swap out nuts to one of preference or on hand.

Healthy Banana Oat Pecan Muffin Recipe
Yield ~ 12 muffins
Prep Time ~ 20 min
Cook Time ~ 25 min
Indregients
1/3 cup extra virgin olive oil
1/3 cup maple syrup
3 ripe bananas, mashed (skin starting to brown is good)
1/4 cup milk
1 tsp vanilla extract
1 tsp baking soda
1 tsp cinnamon powder
1/2 tsp salt
1.5 cups whole wheat flour
1/2 cup oats
1 cup chopped pecans
2 eggs
Method
Preheat oven to 325 deg F. Grease a muffin tin.
In a large bowl (or bowl of stand mixer) whisk the olive oil and maple syrup.
Add in eggs 1 at a time beating well after each addition.
Add in the mashed banana, milk, vanilla extract, baking soda, cinnamon and salt and mix well
Gently fold in flour, oats and pecans until just combined. Do not over mix.
Divide into 12 cups of the muffin tin and place in oven. Cook for 25 min or until a toothpick inserted in the center of a muffin comes out clean.
Serve with almond butter or regular butter and enjoy.
To freeze allow to cool completely before placing in a freezer bag and sealing. Place freezer bag in airtight container and freeze.
To defrost place individual muffin in microwave for 30s.
