Savory French Toast with Parmesan Cheese (Egg Toast)

Growing up I had always eaten savory french toast and would throw this together at a very young age. Wanting to make a quick, yummy, home-style meal for me and my 4 yr old, I decided to make this comfort food. He enjoyed it with a glass of refreshing cold milk and myself with a glass of fresh orange juice.

I had NEVER tasted sweet French toast until my adult life. The combination of egg and syrup scared me and I was so familiar with making it the savory style I did not want to venture out. I eventually did and I loved it as well! Since there are like a million sweet french toast recipe's out there, I thought I would add my personal savory style to my blog.







Truly speaking you can use ANY bread you have. Sliced store bought bread, brioche, french, sour dough - it really is your preference or whatever you have on hand. I recently made this with 12 grain Oroweat bread and I liked the texture with the grains. I also made it with day old french bread and it gave me an excuse to use up the left over while still tasting great. When using french bread I choose not to soak it in the mixture for very long. This is a preference - if you like the mixture soaked all the way in, be sure to cook it for a little longer. With regular bread the slices are thinner so it soaks but also cooks quick.


The ingredients are pretty simple and the Parmesan takes it up a notch. Adjust salt and pepper to taste preference keeping in mind the cheese gives it a bit of salt as well. I sprinkle the Parmesan on each side half way through cooking to give it that delicious almost crispy coat. Mixing it into the egg does not ensure each slice gets equal amounts. My preference is to use cream instead of milk since it makes a thicker mixture but if you only have milk on hand you can substitute.


I also use a small amount of unsalted butter on a non-stick pan to be sure they don't stick before and after the Parmesan step. I used 2 eggs since I wanted to make just enough but feel free to double the quantity for more.

Savory French Toast with Parmesan Cheese (Egg Toast) Recipe


Yield ~ 3 regular slices/4 french loaf slices

Prep time ~ 3 - 5 min

Cook time ~ 4 min a slice


Ingredients

  • 2 eggs

  • 1/8 tsp pepper

  • pinch of salt (to taste keep in mind parmesan adds some salt)

  • 1 Tbsp heavy cream

  • 1/8 tsp thyme

  • 1/8 cup parmesan

  • 1 Tbsp unsalted butter (divided into 4)

  • 3 slices of regular bread/4 slices of day old french loaf


Method

  1. Whisk eggs in a small bowl.

  2. Add salt, pepper, heavy cream and thyme and whisk well.

  3. Pour into a flat rimmed dish like a pie dish.

  4. Heat a small non stick pan on medium heat and melt 1/4 Tbsp butter.

  5. Dip both sides of bread in egg mixture let the excess drip back into the dish.

  6. Place the dipped slice on the pan. Allow the one side to cook for about 1min before turning.

  7. Immediately sprinkle with some of the Parmesan. Allow the other side to cook for about 1 min and flip. Immediately sprinkle the second side with Parmesan and allow the bottom to cook again for about 1 min (making sure not to over brown). Flip and let the second side coated with Parmesan to brown for about 1 min and remove.

  8. Repeat for all the slices.

  9. Serve hot with tea, coffee, mimosas, orange juice, milk (or beverage of choice)
