I make most of my spicy vegetables in a very similar way and miraculously they all taste different and delicious. Green beans is one of these easy ones where if you follow the standard method turns out great.


These are amazing when served with roti. It can also be served on rice alone or with other dishes. Dhal for example goes great with green beans over white or brown rice (Dhal recipe in link below). My son is convinced if he eats green beans he will grow taller and get to age 5 sooner or "quicklier"... lol.



I have tried to give him realistic expectations around this but he does like to pretend everyone and everything has a superpower right now. Either way I am blessed that he does love this with roti.


If you have read any of my other recipes - the base is very similar with finely chopped onion, thai green chili, cinnamon, garlic, ginger and red curry powder/Durban Red Masala. The key around this dish is the way in which you slice the green bean. I mean technically it's the same ingredient but I truly feel like slicing in fine slanted slices allows it to absorb the flavors and taste so much better.

The cooking time will vary depending on the bean, your desired softness and your stove. I like the green bean tender but still a little firm - I do not like it overcooked. This will need to be monitored at the end.

Spicy Green Bean Recipe


Yield - 3 - 4 servings

Prep Time ~ 10 min

Cook Time ~ 21 min


Ingredients

  • 2 Tbsp olive/vegetable oil

  • 1 small onion (finely diced)

  • 12 oz green beans (finely sliced into slanty thin slice - see pic above)

  • 2 cloves garlic (finely chopped or pressed)

  • 1/4 tsp ground ginger

  • 1 cinnamon stick (broken into 2 pieces)

  • 1 thai green chili (increase if you would like it hotter)

  • 2 Tbsp Red Curry Powder / Durban Red Masala (link to recipe above)

  • 1 tsp salt (or to taste)

  • 1/2 cup water (more if needed)

Method

  1. Place a flat pan on medium heat and add with the olive/vegetable oil.

  2. Add onions and fry until translucent ~5 min

  3. Add garlic, ginger, green chili and cinnamon stick and fry for 2 min mixing frequently

  4. Add red curry powder/Durban red masala and fry for about 2 min mixing frequently.

  5. Add green beans, salt and water. Cover and allow to cook, mixing occasionally until desired tenderness approx 12 min. Serve with white or brown rice, with roti or as a side.
