As part of my blogging journey I started by sharing all the food I make on a regular basis. Now that I am documenting these recipes, I realize how ridiculously simple some of them are. One such item is a super simple carrot salad.
Carrots and cucumber make up the heart of this salad with a “just as simple“ white vinegar dressing. This salad can be used as a side to any main dish, but I especially like it on the side of spicy dishes. The cool of the salad and the heat of a pungent curry make a wonderful flavor combination.
I prefer to grate/shred my own carrots - I am not a fan of the pre-shredded kind. I find them to be thicker, harder and dryer but maybe I have not found the right brand yet.
If I am making this for my small family of 3 then I use 1 large carrot and half an English cucumber. Feel free to double/triple as needed.
Simple side carrot salad recipe
Prep Time ~6min
Yield ~ 3-4 side servings
Ingredients
1 large carrot (grated/shredded)
1/2 large English cucumber diced into small cubes
1/4 tsp salt (adjust to taste)
1/2 tsp fresh ground clack pepper
2 Tbsp white vinegar
Method
Placed all ingredients in a bowl and toss. Serve immediately.
*If not serving immediately - do not add salt and vinegar until you are about to serve.
