There are thousands of vanilla cupcake recipes online. I have researched and sampled a few and I found one that we absolutely love. We use it for all occasions since it is pretty quick and easy to make. It is also so satisfying that it has turned out great every time. I love that this blog also allows me to bookmark my tried and tested favorites from other creators.
This weekend my son had a play-date decorating Halloween cupcakes so we made a batch which prompted me to post this. The recipe is pretty easy where you sift the dry ingredient separately, cream butter and sugar, add in eggs and vanilla until incorporated then alternate dry ingredients and wet ingredients.
The recipe is pretty great as it is written but I would throw in these important tips:
Bring all the ingredients to room temperature before baking.
Spend a little extra time making sure the butter and sugar are creamed well until light and fluffy.
When alternately adding the flour and milk at the end mix very slowly and as little as possible. Mix until just combined. (I switch to folding by hand for the final addition.
You will feel the lightness of the mixture as you spoon them into the cupcake holders. The result is a perfect batch of 12 pretty evenly sized cupcakes. The color should be pale and not overcooked.
The recipe creator also has a link to frosting/icing recipe which I have tried, colored appropriately and decorated as necessary. These cupcakes are versatile to be decorated and enjoyed for any theme. It can quickly turn a day into an extra special occasion.
